Why is it that the hepatic portal vein contains variable amount of glucose during the day?

The hepatic portal vein takes blood from the digestive system to the liver. After a meal, the blood travelling along it is likely to contain more sugar (from the meal). The liver stores any excess sugar so the other blood vessels have a fairly constant level of sugar.
