The effect of pH on the cell membranes of beetroot cells and amount of pigment released

I would like to know is it true that it breaks down the membrane due to it is phospholipid bilayer. or some something like the best pH for enzymes to work. Mainly wanted to know would it give a good range of results for me to write my coursework because i do not want to do something that cannot make a solution/ conclusion.

etutor answers:
Altering the pH denatures the proteins in the cell membrane (like it does to enzymes, which are also proteins) - it does not affect the lipids
