Beetroot cells

If beetroot is left in the refridgerator over night what effect would that have on the break down of the cells within it?

etutor answers:

Breakdown of cells results from proteolytic (protein digesting) enzymes being released from damaged cells. The low temperature in a fridge would slow down these enzymes and so slow down cell breakdown.
